The Shizuoka prefecture, located near Mt. Fuji in Japan, produces nearly 40% of the country's green tea. This premium sencha is produced with only the finest young and most delicate first flush tea leaves. This is our most affordable sencha--we think it sets a high standard for what to expect in a balanced, flavorful green tea.

• Steep at relatively lower temperatures, around 160 to 170 degrees, for about 2 minutes
• Steeping at too high a temperature, or for too long, results in a more bitter flavor
• Steeping at a higher temperature brings out more caffeine
• Steeping at a lower temperature brings out more theanine (an amino acid that gives the tea its sweeter flavor)
